It may be a horrific abomination against nature, but I’m pretty sure they could outrun it.

But it is in their dungeon area. They must learn how to exploit all the monsters, in the area. This one seems particularly good at only eating the softer organic parts. Gold, metal weapons and other harder loot would survive the process nicely.

They just need to make sure that they do not attract any adventurers tougher than its challenge rating. Not until they can diversify their ecosystem enough to cope with the loss of such an apex predator.
